One day, while baking cake in the kitchen, I broke into tears. “I wasn’t happy with my life”. I didn’t have the luxury of stopping my hamster wheel. I had to keep running while trying to figure out how to stop the cycle.
While mixing that cake up in the kitchen, I didn’t know at the time, God was mixing something as well. He was making something beautiful with my pain. I finished my rum cake, and it was so moist it, fell apart!
I thought, “this is money right here, and it’s too good to put in the trash”. I thought about my grandmother’s cake. The presentation was terrible, but her ugly cakes tasted wonderful. As kids, we didn’t care. We were excited to have cake. We cut slices of cake and put them in whatever we could find: plates, bowls, cups, in our shirts. We were just as content and happy because the cake was so delicious!
So, I grabbed a jar and stuffed cake in as many jars as I could find. The following weekend, I went around to local businesses with 25 jars of cake and sold out in one hour. (Known now as Mandie Cakes™ on The Go, a food truck without the truck). Since then, I’ve not been able to stop selling cake.
Mandie cakes™ is more than cake, it’s about serving happiness in a jar. Our Slogan is “Have your cake and Drink It Too!” Liquor, cream, and cake. Because you can have all the things that make you happy, however you like. Our cakes are made from scratch, with fresh ingredients and they don’t require much icing. It’s your mother’s, grandmother’s, or auntie’s cake with a dash of southern finesse, charm, and comfort. Not a whole lot of bells and whistles; just goodness in a jar.
